Black and Brown Rice Salad with Hummus

Black and Brown Rice Salad 1

When you can’t decide what type of rice to use, use them both! 

  • 1/4-1/2 cup of brown and black rice (cooked together and cooled – I used leftovers from my stir fry the night before)
  • 1 tbs flaxseed oil
  • squeeze of lemon
  • salt and pepper
  • half a small avocado, sliced and cut in half
  • half a cucumber, sliced
  • handful of snow pea shoots
  • generous dollop of hummus

Stir flaxseed oil, lemon and seasoning through the rice, and fold in vegetables. Serve with a dollop of hummus. Easy, healthy and so delicious.
