When you can’t decide what type of rice to use, use them both!
- 1/4-1/2 cup of brown and black rice (cooked together and cooled – I used leftovers from my stir fry the night before)
- 1 tbs flaxseed oil
- squeeze of lemon
- salt and pepper
- half a small avocado, sliced and cut in half
- half a cucumber, sliced
- handful of snow pea shoots
- generous dollop of hummus
Stir flaxseed oil, lemon and seasoning through the rice, and fold in vegetables. Serve with a dollop of hummus. Easy, healthy and so delicious.
