- 2 small apples
- 1/3 cup oats
- 1/3 cup walnuts
- 1 tbs flaxseed meal
- pinch salt
- 1 tsp cinnamon
- 1/2 cup flour (spelt or normal)
- 1 1/2 tbs nuttlex
- approx. 1/2 cup iced water
- 1 tbs nuttlex/coconut oil
- 1 tbs coconut sugar
- 1 1/2 tbs maple syrup
- 2 tbs date jam/syrup (optional)
- 1/3 cup rice/almond milk
Process oats, walnuts and flaxseeds until fine. Add salt, cinnamon and flour and whizz to combine. Add nuttlex and process until it resembles fine bread crumbs. Slowly add water while processing until mixture forms a ball. Wrap in cling wrap and leave in fridge for 1/2 hour.
Divide pastry in two and roll out to 3mm thickness. Wrap apples completely in pastry. Bake in preheated oven (190 degrees celsius) for about 45mins.
Combine sauce ingredients in saucepan, bring to a gentle boil and simmer for 5 mins.
Serve apples warm with sauce and non-dairy ice-cream.
