Craving eggs? Look no further than scrambled tofu.
- 1/3 packet plain firm tofu (or smoked tofu is also nice)
- slug of tamari/soy sauce
- 1 tsp ground coriander
- handful parsley and chives, chopped
Mush the tofu with a fork to create a scrambled look. Fry tofu in extra virgin olive oil for several minutes on medium-high until browned, stirring regularly. Add pepper, tamari and coriander and fry for another minute or so. Toss herbs through and serve on toast. You could add some spinach too for more greens.
