This is a really quick, easy, delicious and healthy breakfast or lunch. You can’t lose.
- 360 g pumpkin, chopped into smallish chunks
- 3 cloves garlic, finely chopped
- 1 tbs sage, finely chopped
- handful of english spinach, roughly chopped
Microwave or boil your pumpkin until quite soft. Fry garlic in extra virgin olive oil, then add pumpkin and cook on medium-high heat for about 5 minutes. Season with salt and pepper and stir though sage and spinach until wilted.
Serve on toast.
