Lemon & Coconut Raw Balls

Lemon & Coconut balls

  • 1 cup almonds
  • 1/2 cup oats
  • 1/2 cup coconut flour
  • 1/3 cup desiccated coconut
  • 5 medjool dates
  • rind of 1 lemon
  • juice of 1.5 lemons
  • 3.5 tbs coconut oil
  • 1 tsp vanilla essence
  • 2 tbs maple syrup
  • pinch salt

Process almonds and oats until fine, add remaining ingredients, process until combined. Roll into balls, coating some in coconut flour or desiccated coconut.

Leave in the fridge for 15 minutes to firm.

Store in the fridge.

makes approx. 26 balls
